What are your family’s top 3 favorite meals?

Today’s prompt by WordPress is to name my top three favorite family meals.

It’s difficult to answer this question, as I have many favorite dishes!

I am a big foodie in life. I consider food as one of the main pleasures in life! I cook everyday something for dinner, usually I cook from scratch. For me both the process of cooking and then eating it are important. I relax when I cook, and I enjoy the result of my cooking. My loved ones love it too.

For some reason, it’s considered that if you are a foodie then you like complicated things. I go occasionally to the restaurants to enjoy something different, but with maturity I learned that the simplest food is the best. Some people enjoy the long process of cooking, baking, spending hours on it, but I rarely cook for more than half an hour. I work almost full time, and want to chill when I cook, not labor over something difficult.

Being born in Russia I also like Russian dishes, but they ask for too much time. If I am on holidays I might try to cook borsch (Russian famous soup) or make pelmeni (a kind of ravioli, but with more flavour), or bake a nice cake. But in my daily routine I keep it simple.

I have a friend who always thought that cooking is very difficult until he met me. I just stand in the kitchen, creating something out of what is available in the fridge. I rarely follow any recipes, I just cook. The obligatory ingredients though are garlic, onion, pepper, salt and some olive oil. Adding garlic always creates flavour, and fried onion will make even boiled potatoes slightly more interesting.

My friend watched me cooking and now can make simple dishes himself, and therefore, I just want to share with you some very simple recipes!

  1. Pasta with mozzarella, garlic and courgette.

I learned this recipe from my Italian friend. You just need some of your favorite pasta (I use tagliatelle for this dish), cook it, and then add sauce. For the sauce you fry garlic and courgette, and then mix it with pasta and add some mozzarella to it and pepper. It’s one of the simplest things you can cook, but the result is astonishing. It does taste good!

  • Pie with mushrooms and leek.

It is the easiest dish to make, if you have access to ready-made dough (that you can just put into the oven) from the shop. There are many choices currently in the shops, at least where I have lived and you can just choose your favorite.

Fry some mushrooms with leek, and put this mixture on your rolled dough. You can also add cheese on top. Put it in the oven (fifteen minutes), and then enjoy the delicious treat!

  • Pasta with salmon and leek sauce.

For this dish I also prefer tagliatelle pasta. Cook the pasta while you prepare the sauce. Fry some leeks, then add double or single cream, and pepper. Cut some smoked salmon into small pieces. Once the pasta is ready, mix it with the leek sauce and salmon, and add cheese if you want to.

Sorry that I didn’t share any Russian dishes with you, but I will in the future!

  1. Thanks for the recipe ideas! I will definitely try them. Although I had to look up what a “courgette” was (we call them “zucchini” here!)
